Industry Experience
Sharing what worked with other independents
HSTB was developed in a real supermarket. The ideas came from operating the department, watching customer behavior, training employees, creating promotions and learning what caused customers to recognize the store for meat.

Teaching the meat department
Bob shared experience on butcher-shop atmosphere, employee training, customer service, merchandising, case presentation, pricing and gross-profit thinking, control cutting, variety, promotional formats and department identity.
The butcher has to know more than how to cut meat
Technical skill matters, but customer-facing butchers also need the confidence to answer questions and help customers make decisions.
Progressive Grocer Independent
Bob also shared his experience through Progressive Grocer Independent, including the articles Saving the Butchers and Your Best Foot Forward.

Retailer seminars
Surviving presentations show that the message was broader than advertising. A successful department started with quality product, qualified help, good presentation and consistency—then built on those strengths with service, merchandising and unique marketing.
Knowledge. Service. Fresh cutting. Customer access. And making sure customers understand that those things are available.
